- Prepare 1 packet sev puris(24 -30 puris)
- Prepare for stuffing–
- Prepare 2 cups mashed boiled potatoes
- Use 1 cup finely chopped onion
- Get 1/4 cup finely chopped fresh coriander leaves
- Get 1/4 tsp turmeric powder
- You need 1 tbsp green chillies ginger paste
- You need 1 pinch asafoetida
- You need to taste Salt
- Prepare 1 cup spicy green chutney
- Provide Fistful fresh coriander leaves
- Get 4-5 spicy green chillies
- Take 1/4 tsp salt
- You need 1/4 tsp black rock salt
- Take 1/2 lemon juice
- Use for dates- lemon chutney/ khajur chutney
- Take 8-10 red dates(boiled)
- You need 1 tsp red chilli powder
- You need 1/2 lemon juice
- Prepare 1/4 tsp roasted cummin seeds powder

- Take To make maida slurry–
- Use 4 tbsp maida
- You need 1 pinch salt
- Get as required Bread crumbs for coating
- Provide as required Oil for deep frying
- You need as required Besan Sev to garnish
- Take as required Tomato ketchup to serve
Instructions to make Sev Puri Bomb:
- For stuffing –In a mixing bowl add all mentioned ingredients for making it. Mix well and keep aside. Prepared bread crumbs by toasting 6-8 bread slices,and grind in a mixer jar.
- Prepared both green chutney and dates/ khajur chutney with the mentioned ingredients for making it,by grinding in mixer jar with little water.( Keep the consistency of chutneys thick.
- Heat oil in frying pan.Take 8 puris(at a time). Apply little of green chutney on 4 Puris,and little of dates/ khajur chutney on another 4 Puris as shown.
- Prepared thin slurry by adding enough water to maida flour,salt. Mix well, On red chutney coated Puri place little stuffing mixture, covered with green chutney spread Puri.(See the photos).
- Dip these prepared stuffed sevpuri in maida slurry,coat each with bread crumbs as shown. Similarly prepare all.
- Deep fry in hot oil on medium flame till crispy golden brown.
- Place on serving plate,on each put little khajur chutney on it little green chutney and sprinkle besan sev. Serve/ Relish Delicious SevPuri Bombs with tomato ketchup.
