- Finely grate raw mango.In a kadai pour 2 to 4 tsp oil.Once oil is hot add mustard seeds.After it splutters add curry leaves,hing, turmeric powder and green chillies.
- Next add grated raw mango. On medium to low flame fry the raw mango.After it gets little cooked add the tamarind pulp extract from soaked tamarind.
- Here the mango i have used was not so sour so I added little tamarind pulp.If mango is very sour then you skip tamarind pulp.
- Now add a cup or little more water to it.Add salt,2 tsp sambar powder and allow it to boil.
- Add required jaggery as per your taste.Here I have added a big lemon sized piece of jaggery. Crush jaggery and mix well.
- Meantime in a small pan add a tsp of oil and add neem flowers to it.In very low flame fry it till it turns brown.In last picture you can see the colour of neem flowers.
- Now add this neem flowers to the kadai where the raw mango mixture is boiling.Mix well and off the stove.Remove the gojju and transfer it to another vessel.
- Delicious Ugadhi special maavinkayi and neem flower gojju is ready to serve. Serve it with hot rice.
